5. Our engineers control the entire process that begins when the previous year´s harvest comes to an end. The venerated trees are well taken care so as to be in a healthy state at all times, and we intervene if they need any care. There are small designated areas with deposits for taking samples from the ecosystem, used to monitor the health of the tree, the olive and the environment, so that man through his action adds to the maintenance of balance. This is the preventive quality control that the team of Terra Andúyar applies with determination.

During the process of flowering and subsequent growth of the fruit, the hydration level of the tree and its fruit is observed, so that it does not suffer at any time. What is more, the times of ripening are controlled and follow their natural course.

During the harvest, the fruit is picked with a soft touch and gentleness, in such a way that the fruit of our Terra Andúyar in solid state, does not suffer any damage, nor ferment, nor lose character or sublime organoleptic properties. The treatment is the same as any person might wish for himself; if you treat someone gently, that same treatment is returned.

The olive is protected in its infancy, when it is just a seed. It is taken care of and nurtured when it is growing. And it respected when, independent of the tree, it abandons it. Detached from the tree, the olive is still treated with the same care as when it was born, when it grew, and when it was finally picked.
